Southwest Tomato Sauce
1.5 cups |
diced tomato |
1 cup |
diced onion |
1 Tb |
chopped garlic |
1 Tb |
chopped jalapeno pepper |
1 cup |
chicken broth |
1/4 tsp |
ground cumin |
1/8 tsp |
ground coriander |
1 Tb |
chopped cilantro |
2 Tb |
sweet butter |

1. in a small sauce pot add all ingredients except butter and cilantro.
2. Bring to simmer and cooked covered for about 12 minutes. Coarsely blend the sauce using a handblender or cuisinart to form a rough puree. Reheat sauce. Whisk in butter 'till completely absorbed. Add cook pasta, simmer one minute add cilantro and serve.
